The Creole Tomato is a fruit/vegetable that is only grown in the soils of LOUISIANA and has the most intense flavor of any tomato I’ve ever had… but more then
that, its roots are there and so are mine.
Growing up in New
Orleans, I had the pleasure of being groomed in, and
managing several of its finest restaurants … some of which you may recognize…
Commander’s Palace, Emeril’s, Herbsaint Bar and Restaurant, and Smith & Wollensky Steak House.
Most of my 26 years experience flourished in the “front of house positions…floor manager, party
coordinator and general manager, but now my passion lies in the kitchen.
After watching celebrity chef’s like Paul Prudomme, Emeril Lagasse’, and Susan Spicer, along with
the grass-roots know-how of “Mom and Pop,” experience the “flavor” of my Hometown cuisine.
